My Favorite North African Vegetarian Recipes | The New York Public ...

The cuisine of North Africa Viktor Vasnetsov. The Flying Carpet (1880)Viktor Vasnetsov. The Flying Carpet (1880)(Algeria, Egypt, Libya, Morocco, and Tunisia) was influenced by the many peoples who settled there: African, Islamic, Arab, Berber, Ottoman, French, Italian and Spanish. It has its roots in the beginning of civilization itself.

In addition to use in bread and pastry dough, wheat, an important staple in North African cooking, is made into bulgur and couscous. Bulgur, or cracked wheat, is made by partially cooking the wheat grains in water, drying them, then breaking them into pieces. Couscous is semolina (mostly durum wheat or barley), rolled in flour to produce a cross between grain and pasta.

The vegetarian tradition of North Africa makes use of a multitude of whole food ingredients: Honey, sesame paste (tahini), almonds, pistachios, and pine nuts are used in both sweet and savory recipes. Butter and clarified butter (called ghee in India) are traditionally the preferred medium of cooking for those who can afford them. Olive oil is prevalent in Mediterranean coastal areas. For better or worse, vegetable oils have lately replaced traditional oils because they are cheaper and considered healthier. Common spice mixtures include cinnamon, cloves, cumin, coriander, tumeric, salt, black pepper, bay leaves, caraway seeds, fenugreek leaves, paprika, thyme, saffron, nutmeg, and ginger. Chili peppers are used in a paste called harissa.

Green leaf vegetables such as mint, parsley, many varieties of cabbage, spinach, and chard are used in abundance. Common root and bulb vegetables include potatoes, onions and garlic, as well as carrots, turnips, and beets. Cucumbers, squash, tomatoes, zucchini, and eggplant are the most common ingredients in vegetable stews and salads. Common fruits include lemons, oranges, apricots, figs, dates, and pomegranates. Green and black olives, and capers arrived in the area before the Romans. Commonly used legumes include fava beans, chickpeas, haricot beans, lentils, and split peas.

Milk, fresh or soured, is another important staple in North Africa. Yogurt, a Turkish contribution, is commonly consumed plain, used in cooking and in salad dressings, or diluted as a drink. White cheese, like the Greek feta, is made from sheep's or goat's milk. Eggs are also very important ingredients in savory cooking. Under the Ottoman Empire, dense, sweet coffee was brought to the area, and is now widely consumed throughout North Africa and the Middle East.

Tabouli

adapted from The New Moosewood Cookbook by Mollie Katzen

The name for this bulgur wheat and parsley salad, tabouli, translates as "little seasoning," and is derived from the Arabic word tabil.

Algerian turban cover, Wikimedia CommonsAlgerian turban cover, Wikimedia Commons

Ingredients:

1 cup bulgur wheat
1 1/2 cups boiling water
1 teaspoon salt
1/2 teaspoon pepper
juice of 1 lemon
1/4 cup olive oil
4 cloves garlic, minced
4 scallions, chopped
1 cup chopped parsley, packed
1/4 cup mint leaves, chopped
3 medium tomatoes, diced
1 can pitted black olives, chopped

Preparation:

Pour boiling water over wheat, cover with plastic wrap, and soak for 30 minutes. Stir in salt, lemon juice, oil, garlic, pepper, and scallions, and chill for 30 minutes. Before serving, mix in the rest of the ingredients.

Falafel

These chickpea fritters are traditionally deep fried. For a lighter, more delicate version, pan fry in almond oil. The word falafel comes from the Arabic fal?fil, the plural of filfil which means "pepper," from the Sanskrit word pippal?, or "long pepper."

Ingredients:

2 cups dried chickpeas, soaked in water overnight
1 teaspoon baking powder
1 small onion, coarsely choppedArab restaurant, Egypt., NYPL Digital ID 88469Arab restaurant, Egypt., NYPL Digital ID 88469
6 garlic cloves
1 tablespoon ground cumin
1 tablespoon ground coriander
1/4 teaspoon red pepper flakes
3/4 cup parsley, packed
salt and black pepper to taste
vegetable or almond oil, for frying

Preparation:

Drain, then pulse chickpeas in food processor to coarsely grind. Add baking powder, onion, garlic, spices, and herbs; process until mixture is pureed. Heat oil in frying pan or in deep fryer to 375 degrees. Roll falafel mixture into 1 inch diameter balls. Fry in deep fryer for 5 minutes. If pan frying, saute until brown on both sides. Drain on paper towels. Serve in pita pockets with lettuce, chopped tomatoes, hummus, baba ganoush, and tahini sauce and/or harissa.

Tahini Sauce

The English word tahini comes from the Arabic ?a??n?a, and is derived from the verb "to grind." This extremely popular sauce is used in most North African sandwiches.

Ingredients:

1/2 cup tahini
1/2 cup low fat yogurt or water
juice of 1 lemon
2 garlic cloves, chopped
salt to taste
pinch hot paprika or cayenne

Preparation:

Combine all the ingredients in a food processor until creamy.

Harissa

adapted from The North African Kitchen by Fiona Dunlop

The word for the fiery Tunesian chili paste harissa is derived from the Arabic verb harasa, "to pound."

Ingredients:

1 tablespoon coriander seeds
1 tablespoon caraway seeds
2 teaspoons cumin seeds
9 oz. fresh red chilis, roughly chopped
cloves from 1 head of garlic, peeled and roughly chopped
1 tablespoon dried mint
1/4 bunch fresh cilantro
1 tablespoon salt
2-3 tablespoons olive oil

Preparation:

Toast seeds in pan without oil for about 2 minutes. Grind to powder in spice grinder. Add this blend to rest of ingredients in a food processor, adding enough olive oil to make a stiff paste. Put in sterilized jar with a thin layer of olive oil over top; store in refrigerator.

Restaurant Style Hummus

adapted from Cook's Illustrated

The English word hummus comes from the Arabic ?imma?, meaning "chickpeas."

3 cloves garlic
salt to taste
1/2 teaspoon cumin
1/2 teaspoon Ras el Hanout
hot paprika

Preparation:

Combine water and lemon juice in one bowl, tahini and oil in another. Put chickpeas, garlic, salt, and spices in food processor and blend for 15 seconds. Scrape down sides of bowl, then add lemon/water mix and process for 1 minute. Scrape bowl down again, add oil and tahini with processor running and blend until hummus is fluffy. Transfer to plate orbowl, and spinkle top with paprika. Serve chilled or at room temperature.

Ras el Hanout

from Classic Vegetarian Cooking From the Middle East and North Africa by Habeeb Salloum

Ras el Hanout means "top of the shop." For North African souks, or spice merchants, it is a point of honor to have the most sought after version of this blend.

Ingredients:

1 tablespoon ground cumin
1 tablespoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon ground cinnamon
1 tablespoon black pepper
1 tablespoon ground coriander seeds
1/4 teaspoon cayenne
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon mace
1/2 teaspoon cardamom

Preparation:

Combine all ingredients. Store in an airtight container at cool room temperature.

Baba Ganoush

adapted from Williams-Sonoma's Small Plates by Joanne Weir

According to food legend, baba ganoush (which means "spoiled old daddy" in Arabic) was created by a doting daughter who delighted in pampering her toothless father. This dish tastes best when the eggplant is grilled to char the skin, then baked until soft in the oven. I have adapted this recipe for city kitchens. (If you like, you can char the eggplant's skin on a gas burner on your stove top, then finish it off in the oven. Be sure to use caution around an open flame!)

Ingredients:

1 large eggplant
1/4 cup tahini
juice of 1 lemonAuberginen im Supermarkt, Claus Ableiter, Wikimedia CommonsAuberginen im Supermarkt, Claus Ableiter, Wikimedia Commons
3 cloves garlic
salt to taste
1/2 teaspoon cumin
1/2 teaspoon Ras el Hanout
1 tablespoon olive oil
hot paprika

Preparation:

Pre-heat oven to 400 degrees. Score eggplant with a knife down its length at about 1 inch intervals. Wrap eggplant in aluminum foil and roast for one hour, rotating every 15 minutes, until eggplant is soft. Remove from oven and peel. Place cooled eggplant in food processor, add tahini, lemon, garlic, salt and spices and blend until smooth.Transfer to plate or bowl, and sprinkle top with paprika. Serve at room temperature.

Although not strictly vegetarian, these cookbooks are full of of delicious, healthy North African and Middle Eastern recipes.

Brits revel in gloom ahead of London Olympics

thewebweddingstore on ebay

This badge, which was put up for sale on eBay, gives an indication of the attitudes of some Britons ahead of the Olympics.

By Ian Johnston, msnbc.com

LONDON -- If?grumbling ever becomes an Olympic sport, the United Kingdom has to be a surefire bet for gold.

The level of complaints, fears and general discontent about the 30th Olympiad in London?this summer has reached fever pitch, moving?well-known commentator David Randall, of The Independent on Sunday newspaper, to write a column entitled "Come on, Britain! Stop moaning! It's the Olympics, for heaven's sake!"

Some fear too many people will come to London, causing a "perfect storm" of congestion on the roads -- so bad that lives could be endangered?-- along with congestion on the subways, and also on the Internet; others think that actually?fewer visitors than usual will come?because ordinary tourists will be put off,?so the games will provide?little or no boost to the city's economy.

Composer Andrew Lloyd Webber even predicted "a bloodbath of a summer" for London's theaters?after a slump in advance orders for tickets.

Then there has been a slew of?gripes about tickets for Olympic events, such as not being able to get them?unless you are a member of the super-rich, and?unnecessary secrecy about the ticketing process.

Some worry?London will get a bad name if visitors are ruthlessly gouged for every cent, by unscrupulous landlords, over-priced hotels?or expensive Olympic souvenirs, for example.

However, one of the main groups representing London taxis seemed somewhat put out?after it tried unsuccessfully to get approval to increase fares by a hefty 22 percent during the games.?Allowed only?a 5.3 percent raise, a drivers' representative suggested that many cabbies might decide not to show up for work.

Morris-dancing anarchists?
Other complaints include?the potential $17 billion cost?of the event to taxpayers, and that Scotland, some 500 miles to the north of London, will see little benefit from the presence of the Games in the U.K. capital.?

Labor unions?have also been threatening to go on strike during the games to protest the government's austerity measures.?

Darren Staples / Reuters, file

Morris dancers, similar to these Leicester Morrismen dancing in Newtown Linford in 2010, may stage flash mob-style protests after being left out of the opening ceremony, The Daily Mail reported. Morris dancing stretches back some 600 years, but its origins are obscure.

And, if all that wasn't enough, there's the fear of a large-scale terrorist attack, and other assorted threats --?of?varying degrees of seriousness?--?from solar storms, diseases spread by shaking hands, Morris-dancing anarchists,?and, cue the scary music, the "Illuminati."

Olympic housing crunch: London landlords evict tenants to gouge tourists

Any sports enthusiast looking forward to the spectacles of Usain Bolt on the track, LeBron James on the court and Alex Morgan on the soccer field might be somewhat discouraged by all this negativity.

'It's cathartic'
But Peter Catterall,?lecturer in history at Queen Mary, University of London and editor of the journal National Identities, told msnbc.com that this would be a "cultural misreading" of the current outbreak of moaning.

"I think it reflects, if you like, a national history," he said. "The national narrative is often about making the best of heroic defeat, like [the Second World War evacuation of] Dunkirk and so on. The national experience in Britain is not one that's tended to create a sense in which you can just 'seize that hill.'"

Oda / Getty Images

From Wimbledon to Wembley Stadium to The Dome, a look at the venues for the 2012 London Olympic Games.

"There's a tendency to think in terms of what could go wrong, rather than what could go right," he said. "It's a kind of low-level grumbling amongst people who are often quite good at grumbling. I think also people quite like grumbling, it's cathartic."

Testing for terror: Preparing for the unthinkable at London Olympics

Olympic?organizers may even have taken this into account in their planning.

"I do think in part the public authorities have been trying to get the moaning out of the way early,"?Catterall said, although he added that this "may well put off some visitors."

An age-old attitude?
This kind of attitude may go back at least as far as what was arguably the world's first international event for the masses, London's Great Exhibition of 1851.

It was essentially a trade fair showing off?the?best?products from across the world -- exhibitors included China, Persia (now Iran), the United States, India, Tunisia, Philippines and many European countries -- and?it attracted more than 6 million visitors during its five-month run.

Peter Macdiarmid / Getty Images

Will Brits start celebrating the Games when they actually begin? A man sits in the Atlas cafe in Leyton near the Olympic Park in London, England, on March 22, 2012.

However, in the run-up to the exhibition, Londoners expressed a string of complaints and worries that are notably similar to the current ones about the Olympics.

"I think there was a parallel in terms of all these fears," Michael Leapman, author of a book about the Great Exhibition, called?"The World for a Shilling," said.

The prospect of hordes of visitors sparked alarm about congestion -- and as it turned out there were some traffic jams of the horse-and-carriage variety -- and the spread of disease, Leapman told msnbc.com.

And while tickets could be bought for a shilling, prices were increased at the weekends and other times to enable the wealthy to enjoy the exhibits without rubbing shoulders with the "hoi polloi," he added. Leapman said the author Charles Dickens was on a committee to represent the interests of working-class people, but?the exhibition's organizers paid so little attention to?it?that?Dickens quit.

Security was another big concern, with the event coming not long after several European?revolutions in 1848 and amid unrest associated with the working-class Chartist movement in the U.K.

"The Duke of Wellington [a national hero after his victory over Napoleon at the Battle of Waterloo in 1815] wanted to put a troop of cavalry into Hyde Park, but the government said that would be a bit too provocative," Leapman said.

The government also attempted to set up a register of accommodation with set prices, but Leapman said most landlords resisted signing up, trusting the free market to give a better return.

'Enthusiasm'
But the generally positive outcome of the event?gives Leapman, who has tickets to watch hockey, some comfort amid all the present-day moaning.

He said that while there might be "some inconvenience" during the Olympics "I have a feeling it will be a great success, partly judging from the Great Exhibition."

At Olympics, dogs have sniffed out a key anti-terror role

And so?the views of?Hugh Robertson, the U.K. government's minister for sport and the Olympics, should perhaps not be viewed with the usual British cynicism toward politicians.

"My experience of the Games across the country has been one of fantastic support and enthusiasm," he told msnbc.com in a statement, noting the "huge demand" for tickets.

"The Royal Wedding showed that Britons know how to get behind national events, and London 2012 will be the chance to do that on a giant scale," Robertson added. "We [are] determined that everybody who comes to London for the Games has an amazing time."

John Powell, chairman of leading athletics club Belgrave Harriers, is exactly the sort of person who should be bursting with enthusiasm for the Games.

He will carry the Olympic torch and is the coach of sprinter James Ellington, who is a medal prospect for the U.K. if he makes it through the trials.

Powell told msnbc.com that he was "very excited" about carrying the flame; and?it would be "amazing" to coach an athlete to a medal,?the "pinnacle" of his 36 years of coaching.

But even he has a gripe.

If Ellington wins gold, Powell, his coach of some 13 years, will watch his triumph on television because, he said, he and many other coaches will not be given access to the stadium, a decision he described as?"shambolic and a scandal."

"That really does take the edge of it from my point of view," Powell said.

Interview: Amb. Ryan Crocker warns against war fatigue in Afghanistan

Ryan Crocker, US ambassador to Afghanistan, sees progress amid an extended 'rough' patch in relations. He also cautions against quitting Afghanistan too soon, citing Al Qaeda. 'If we decide we're tired, ... they'll be back.'

It?s not news to anyone that the United States and the international community have recently experienced some rough weeks in Afghanistan.

But if there?s a silver lining to the clouds hanging over the American-led war effort here, it?s that the terrible recent events ? the unintentional burning of Qurans by American forces and ensuing civil unrest, the revenge killings of US and other international forces by ?friendly? Afghan soldiers, and the horrific murders of 17 Afghan villagers allegedly committed by a US Army sergeant ? have provided a measure of Afghanistan?s progress, and of the importance of a continuing international commitment.

That?s the message of the US ambassador to Kabul, Ryan Crocker, who counters reports of doom for the US mission in Afghanistan with evidence of progress ? even as he warns of the consequences for America?s national security of giving in to war fatigue and pulling out.

?We?ve had a rough fall, a rough winter ? and we are having a rough spring,? acknowledges Ambassador Crocker, who then shifts focus to two signs of a stronger, more mature Afghanistan as revealed by the recent trial by fire.

First, the Afghan security forces that NATO and other international partners are training to take over command of the country?s security kept control of an explosive domestic climate after the Quran burnings, protecting both Afghans and foreign forces with minimal loss of life.

?It was Afghan security forces who stepped up?. They protected Afghan lives, and they protected American lives [and] the lives of others from the international community,? he says, noting that 30 Afghans were reported to have died in the days of unrest. ?That?s not too darn bad given the volatility of the situation.?

Second, Crocker underscores the fact that, despite some turbulence, the US-Afghanistan negotiations toward reaching a Strategic Partnership Agreement ? the framework that will determine the US military role in Afghanistan after 2014 ? weathered the trying events and are moving forward.

?We?re making very significant headway? in negotiations, he says, ?and we?re doing it under particularly difficult conditions.?

Crocker says such signposts of progress should encourage both the US and the international community to muster the ?strategic patience? that will be necessary for sticking with a country that may seem to be progressing slowly ? but which to abandon would be to open the way to potential recurrences of the 9/11 tragedy.

The two countries have already settled the thorny issue of the conditions for handing over some 3,000 detainees in US custody to Afghan authority, while the question of night raids by foreign forces is still under discussion.

The night raids ? troops entering sleeping villages to ferret out insurgents and suspected terrorists ? are particularly unpopular among Afghans, and they raise the ire of Afghan President Hamid Karzai, who considers them a stab at Afghan sovereignty. But US military commanders consider the tactic an essential tool in the anti-Taliban effort, and the US insists on the ability to rely on the raids in the counterterrorism efforts it wants to continue after the international combat role ends in December 2014.

Some US and international military officials hint that an accord on night raids is likely, perhaps by assuaging Mr. Karzai?s sovereignty concerns with a provision requiring a warrant from an Afghan judge.

Camille didn't want to leave 'Real Housewives'

By Us Weekly

Frederick M. Brown / Getty Images

Did Camille Grammer leave on her own terms -- or was she pushed out?

As a source told Us Weekly?Saturday evening, the 43-year-old ex-wife of Kelsey Grammer won't be coming back for season three of "Real Housewives of Beverly Hills."

Photos from Us: Biggest bomshells ever on RHOBH

The former dancer and Playboy model confirmed it herself to Us later that night at the Grand Opening of a new Blizz Frozen Yogurt at the MGM Grand in Las Vegas.

"I can't say too much at this moment, but we couldn't get it worked out," the mother of two explained to Us. "I love these girls. I really do," she said of costars Kim and Kyle Richards, Taylor Armstrong, Lisa Vanderpump and Adrienne Maloof. "I've had so much fun with the franchise, but I guess the producers and I couldn't come to an agreement."

Photos from Us: Most disastrous Housewives romances ever

Although a Grammer source had said "She just doesn't want to expose her personal life anymore," she claimed the ouster was "mutual," and if she had her way, she'd be back for another round.

"I think I would have done it, definitely."

Her buddies Adrienne Maloof and Kyle Richards were also at Saturday's Blizz event in Vegas -- and they're bummed about her departure.

Video from Us: Smackdown! Remember the mass fight at Camille's dinner party?

"It's sad," Maloof told Us. "Together the six of us were a great combo."

Added Kyle Richards, "It's going be sad not having her in the show. It's sad."

One major source of comfort for Grammer in her post-"Housewives" life is hunky boyfriend of eight months Dimitri Charalambopoulos, who was on her arm at Saturday's party. "Everything is great. We get along really well," gushed Grammer, who famously dealt with Kelsey's affair with Kayte Walsh and subsequent divorce filing on season one of the show. "I care about him very much and we're enjoying each other's company."

Do you think season three will be as interesting without Camille? Share your thoughts on our Facebook page!

Anti-inflammatory drugs may offer novel treatment for heart disease, say gene researchers in large study

A large international study indicates that anti-inflammatory drugs may become a new tool for preventing and treating coronary heart disease (CHD), the leading global cause of death. In investigating a specific gene variant linked to inflammation and heart disease, the researchers used the Cardiochip, a gene analysis tool designed by Brendan J. Keating, Ph.D., a researcher in the Center for Applied Genomics at The Children's Hospital of Philadelphia, and co-author of the study.

Scientists already knew that inflammation is associated with atherosclerosis, the buildup of fatty deposits on artery walls that causes CHD, but until now, no one had identified an inflammatory agent causing the disease. Likewise, it was unknown whether a drug targeted at reducing inflammation might treat CHD.

The current study focused on the interleukin-6 receptor (IL6R), a signaling protein found in the blood that increases inflammatory responses. "This study provides robust evidence that IL6R is implicated in coronary heart disease," said Keating. "Furthermore, our analysis showed that an existing anti-inflammatory drug, acting on this receptor, may offer a new potential approach for preventing CHD."

The study, which appeared online today in The Lancet, was performed by the IL6R Mendelian Randomisation Analysis Consortium, an international research team led by Dr. Juan Pablo Casas, Professor Aroon D. Hingorani, and Dr. Daniel I. Swerdlow, all of University College London in the U.K. The study was a meta-analysis of data from 40 existing studies that included nearly 133, 500 participants from the U.S. and Europe. Mendelian randomization is a research method that uses knowledge of genes and biological mechanisms to predict likely effects of a new drug before conducting a clinical trial, with its high cost and potential risk of side effects.

A companion study in the same issue of The Lancet, by the IL6R Genetics Consortium and Emerging Risk Factors Collaboration, found that a genetic variant in the IL6R gene, which carries the code for the IL6R protein, dials down inflammation and thus lowers the risk of heart disease.

The study in which Keating participated focused on SNPs (single nucleotide polymorphisms) single-base changes in the IL6R gene that codes for the IL6R protein.

Among the research team's tools was a DNA array, the IBC Human CVD BeadChip, also called the Cardiochip, created by Keating in 2006 and since used in many large gene studies. That chip contains DNA markers for 2000 gene variants implicated in cardiovascular disease. When brought into contact with test samples of DNA from research participants, the chip detects specific SNPs in the sample gene variants that may affect biological functions and risks of heart disease among the participants.

They found that one SNP, the gene variant rs8192284, altered several biological markers associated with inflammation. Those results were similar to those found in trials of tocilizumab, an anti-inflammatory drug currently used to treat rheumatoid arthritis. By inhibiting the action of IL6R, this drug reduces the painful inflammation common in rheumatoid arthritis.

Further analysis of data from CHD patients and controls showed that subjects carrying the gene variant had a lower risk of CHD. "What this tells us is that IL6R blockers such as tocilizumab mimic the benefits of having this gene variant," said Keating. "A next step will be for cardiology researchers to design and carry out clinical trials to determine whether tocilizumab or similar anti-inflammatory drugs will prevent heart disease."

###

More than 30 organizations and agencies funded this study, including the U.K. Medical Research Council, the British Heart Foundation, the National Institutes of Health and the Wellcome Trust. A senior investigator from The Children's Hospital of Philadelphia, Hakon Hakonarson, M.D., Ph.D., director of the Hospital's Center for Applied Genomics, was among the co-authors who interpreted findings and wrote the report.

"The interleukin-6 receptor as a target for prevention of coronary heart disease: a mendelian randomization analysis," The Lancet, published online March 14, 2012, doi:10.1016/S0140-6736(12)60110-X
